Today we would like to share an easy chocolate cake recipe to prepare an Italian traditional dessert, the Caprese Cake, invented on the beautiful Island of Capri around 1920 - 1930, with chocolate and almonds, crispy outside and soft and fluffy inside.
Perhaps this cake was baked for the first time by the chef Carmine Fiore. According to legend, the cake was invented by mistake: the flour was forgotten and replaced by cocoa powder.

300 g (10,58 ounces) peeled almonds
200 g (7 ounces) sugar
250 g (8,8 ounces) butter
250 g (8,8 ounces) dark chocolate (60%)
5 large eggs
1 pinch of salt
icing sugar to decorate
Preheat the oven to 200° C degree. Toast the almonds in the oven for a few minutes. Allow to cool and then grind them. Broke the dark chocolate into pieces. Put it in the bain-marie to melt. In a bowl mix the butter with half of the sugar and the egg yolks. Add the melted chocolate to the mixture. Blend with a spoon and then add the almonds.
In another bowl beat the egg whites and the remaining sugar until stiff. Add it to the chocolate and almonds mixture, blending with a wooden spoon from the bottom to the top.
Grease the baking pan with butter and line it with baking paper. Pour the mixture in the cake tin and bake it at 180° C for 60 minutes.
Remove the cake from the oven and allow to cool. Place it on a serving plate and and dust with icing sugar.
