In this post we are going to show you how to prepare one of the most delicious Italian chicken recipes, typical of the Emilia-Romagna region’s culinary tradition.
The Italian name of the recipe is “Pollo alla Cacciatora”. The word "pollo" means "chicken" in Italian. “Cacciatore” is the Italian word for hunter, probably coming from the use of herbs, such as rosemary and garlic, which were used by hunters to cook the prey.
This dish originates from the countryside, thus it’s a genuine recipe, with an intese taste.
In order to prepare this Italian chicken recipe, just start collecting the ingredients:
RECIPE FOR 6 PEOPLE
100 g (3.5 oz) pitted olives
100 g (3.5 oz) minced black olives
2 cloves of garlic
1/2 glass of white wine
3 anchovy fillets
extra virgin olive oil
In a pan, heat half glass of white wine and peeled cloves of garlic. After a few minutes add the chicken drumsticks. When the chicken is brown remove the garlic and add the anchovy fillets. Blend with the rest of the wine and a vinegar drizzle. Add the olives and salt according to your taste.
Cover the pan and let the chicken cook for 30 minutes at least. If it gets too dry add half glass of water.
When the chicken is ready serve it immediately.
