Today we would like to introduce you to some of the most appreciated and loved Italian pasta recipes originated from the Lazio regional culinary tradition!
All this pasta dishes and recipes are really easy to make and do not need long preparations!

Spaghetti Aglio, Olio e Peperoncino (Garlic, Oil and chili pepper flakes)
This recipe is perfect when you don’t have many ingredients to cook with or you are a little bit in a rush! It’s simple and really inexpensive and reminds us that the simplest things are often the best too.

Ingredients for 2 people
7 ounces spaghetti, 2 large garlic cloves, extra-virgin olive oil, salt, 1 1/2 teaspoons of red pepper flakes
Cook the spaghetti in salted water, until al dente (usually no more than 8 minutes)!
In a pan put 3 spoons of olive oil and heat with a low fire. Add the garlic and the red pepper until brown. Strain the spaghetti and place it in a large bowl. Add the “soffritto” (the mixture of oil, garlic and red pepper). Your past is ready, serve it immediately!

Pasta alla Gricia

Ingredients for 2 people
7 ounces rigatoni pasta, 6 ounces of guanciale (Italian bacon), 3 ounces Pecorino Romano, salt, pepper, extra-virgin olive oil
In a pan heat some extra-virgin olive oil. Add the guanciale or bacon cut into cubes until brown. Turn the stove off and start cooking the rigatoni in salted water. Strain the pasta when al dente and leave some water (the pasta shouldn’t be too much dried). Place the pasta in the pan with the bacon and immediately add the pecorino. Mix it and season to taste!

Tonnarelli Cacio e Pepe

Ingredients for 2 people
7 ounces spaghetto (or tonnarelli), 3 ounces, salt and pepper
Cook the spaghetti in salted water. Strain the pasta being careful to leave some water. Place it in a bowl and add the pecorino and the pepper. Mix it well and serve it warm!
